Gluten-free Cheesy Italian Zucchini Noodles or Zoodles

Some of you may know now that I am on Keto Diet these days. I get a lot of cynicism and skepticism from a lot of friends saying that I shouldn’t follow such fad diets. Well, my skin is glowing, I have constant energy through the day, I am sharper and more focused at work, & I have lost more than 6 kgs in 2 months. In short, I am feeling awesome. This diet is quite strict and to keep myself motivated, I am searching for keto recipes all the time. As part of my Recipe Blog Club, I got Luca Neutze’s blog in September. In this swap, we pick recipes from each other and try the recipe and then blog about it. There were so many recipes I wanted to try from her blog especially her Duck Tacos recipe (Link). I am going to try it, when I get off my Keto.   Finally, I selected her popular Cheesy Zucchini  Noodles recipe. Yes! Keto Recipe.
 
I am so excited to do Luca’s recipe this time. We have a lot in common despite living in different countries and in different time zones. Both of us have full time jobs but we find time for cooking and developing recipes in our free time.  She loves spicy food like I do. And we both spend a lot of our money eating out or buying too many ingredients. Her blog Simply Delish Eats, has amazing recipes that pair with wine. Wine and cheese are her passions and I am eagerly waiting for her to post more of these pairing recipes.
 
Zucchini noodles or Zoodles are nothing but raw zucchini passed through a spiralizer or cut in julienne. I have them raw with pesto or with mayo like salad. Luca’s recipe for this one uses cooked zoodles. I have given it an Italian twist because I have been craving pastas recently. Since I am on a keto diet, these are a great substitute for a glutenous pasta. Thank you Luca. You made my day.

This killer Keto Recipe with cheddar cheese, spiralized zucchini noodles, sun dried tomatoes and basil leaves is the filling and healthy and is a perfect substitute for a pasta.

Ingredients
  • 1 Zucchini whole raw
  • 2 Cheese Cubes (cheddar) grated ( I used Amul cheese)
  • 1 tbsp butter
  • Cheese cheddar cheese slices ( I love Brittania cheddar cheese slices for melting)
  • A pinch Salt
  • 1 tsp Whole black pepper, freshly crushed
  • 1 tbsp Sundried Tomatoes
  • 6 Basil Leaves
  • ½ cup Water
Instructions
  1. Cut the edges of the Zucchini on both sides. Now, using a spiralizer, make zucchini noodles. If you don’t have the spiralizer, then cut it in matchstick size julienne

  2. In a flat pan, pour the water, salt and zucchini noodles. Cook in medium flame till the water is evaporated. Stir occasionally 

  3. Add all the cheeses onto the pan and stir them in

  4. Once the cheese melts, add the pepper, mix well and take it off the heat
  5. Garnish with sundried tomatoes and basil leaf and serve

Zucchini spiralized noodles can be replaced for a gluten-free zucchini pasta. Sauces that work with Zucchini noodles or Zucchini Pasta are:

  1. Marinara
  2. Cheese 
  3. Pesto
  4. Pairs beautifully with fennel and mayo

I am sure there are more combos, but I have tried the above and they are gorgeous
