I love cooking breakfast. With a full time job, I get time only over the weekends to experiment with my breakfast. After an early morning swim today, we were famished when we reached home. Pratyush was super hungry so I had to think of something quick to stir up. A few weeks earlier I made Baked eggs with Marinara sauce in ramekins for breakfast. So I thought of making another variation today with this healthy baked eggs breakfast with spinach, mushrooms and corn recipe. And it just took 20 minutes. 😀

Ingredients
  • 2 Eggs
  • 10 Button Mushrooms
  • 1 Handful Fresh Spinach leaves roughly chopped
  • 1/2 a cup boiled sweet corn
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp white wine vineger
  • 1 tbsp white wine (optional)
  • 1 tbsp feta cheese
  • 1 tsp olive oil
Instructions
  1. Preheat the oven for 10 mins at 180 degrees
  2. Put the olive oil in a pan on low heat

  3. Add the mushrooms and sautee them in full flame. Mushrooms need to be cooked in full flame else they become soggy soggy

  4. Add the spinach, corn, white wine, red wine vinegar, salt and pepper and toss for a couple of minutes
  5. Now add the feta, stir in and take the pan off the flame. This should take you a total of 5 mins at most.

  6. Divide the mushroom, corn and spinach mixture in two halves and fill into both the ramekins

  7. Crack an egg in each ramekin. You can add two in each if you like. Its ok if the yolk breaks but to make it look pretty, you might want to gently crack them to keep them whole

  8. Season the eggs with a pinch of salt and pepper

  9. Bake for 10 mins at 180 degrees Celsius on a rack or a baking tray. You should see the egg white solidifying but the yolk still looks runny. Take it off the oven and serve.

  10. Dig in with a spoon or dunk in some toast to enjoy the gooey, sligthly tangy deliciousness of this healthy breakfast
