10 minutes Healthy Greek Chicken Skewers with Tzatziki Dip

Sometimes, you want to eat quick and healthy snack or food without making an effort. This chicken recipe is just that. A nice healthy yogurt dip or Tzatziki and some grilled chicken skewers or Souvalaki, as the Greeks call it, and you are sorted for your evening soap munchies. I am serving this dish as the first course at my Greek Food-Up Restaurant next Sunday. The details are shared at the end of this blog post, so do come by if you are in Mumbai.

A Quick, Healthy and Simple Greek Style Chicken Souvalaki with a yummy Tzatziki Dip

For the Chicken Souvalaki/Skewers

  1. 300 gms. Chicken Breast, boneless and cut in cubes
  2. 1 lemon, juiced
  3. 2 Garlic Pods, minced
  4. 1 tbsp. White Vine Vinegar
  5. 2 tbsp. Fresh Oregano Leaves removed from the stem (you can also used dried oregano but use 1 tbsp instead)
  6. 1/2 tsp. Salt
  7. 1/2 tsp. Black Pepper, freshly ground
  8. 1 tbsp. Olive Oil, and some more for basting and greasing the grill
  9. 5-6 Bamboo Skewer sticks or Steel Skewers that you may have with your Grill

For Tzatziki Dip

  1. 100 gms. Greek Yogurt or regular Yogurt (drain out the water using a cheese cloth if you are using regular yogurt and then beat it to a smooth creamy dip-like consistency)
  2. 2 large Cucumbers, de-seeded and grated
  3. 1/2 tsp. Salt
  4. 1 pod Garlic, minced
  5. 1 tsp. Coriander or Parsley,  roughly chopped. I used micro cress leaves
  6. 1/2 tsp. Black Pepper, freshly ground
  7. 1/2 tsp. Lemon Juice
  8. 1 tbsp. Extra Virgin Olive Oil
  9. Optional: 1 tbsp. Mascarpone Cheese

Method for Chicken Skewers

  1.  Mix all the ingredients together in put it a zip lock and refrigerate for an hour. While you are waiting for your chicken to marinate, you can make the Tzatziki style dip mentioned below.
  2. 15 mins before cooking, get your grill pan on the stove set in low flame and let it heat up nicely. Its important to use a grill pan to get nice crusty charred grilled lines on your meat
  3. In the meantime, wash your bamboo skewer sticks with water and pat dry them. The reason to do this is that you don’t want to burn the bamboo skewers when its on the hot grill or barbecue
  4. Take marinated meat out of the fridge and now insert 4-5 pieces of the chicken cubes in each skewer. You should be able to make 4-5 of them.  Reserve all the marinate liquid, which you can use later for a salad dressing if you like.
  5. Grease your hot Grill Pan, turn the heat up to medium and place the chicken skewers
  6. Baste the chicken skewers with some oil and cook for 5 minutes rotating it every few minutes to cook the chicken evenly
  7. For the last minute, turn the heat to full whack and cook the chicken rotating it in intervals again to get the nice charry grill lines on your chicken

Method to make the Tzatziki dip

  1. Pat dry the grated cucumber with a tissue to get the excess water out
  2. Now add all the ingredients to the yogurt and beat the mixture with a whip or just blend it in the food processer
  3. Refrigerate for one hour before serving with your delicious Chicken Souvalaki

Serve the Chicken Souvalaki with the Tzatziki Dip and some fresh Greek Salad which is nothing but freshly cut cucumber, onions, tomatoes, olives, some olive oil and the best ever feta cheese. Also, you can use the left over marinade for dressing. And remember to season it as per your taste 🙂
